A Vegetarian meal: Mission Accomplished!



We try to make at least two to three vegetarian dinners per week.  It is a challenge as we have two boys 9 and 6 and also my husband follows a balanced diet.  I came across this vegetarian hash and changed it up and added to it to make it fit our taste.

I cut the potatoes into small pieces (I do have a very limited time for cooking dinners) and boiled them for about 5 minutes.

Got Olive Oil in a pan and added the onions, jalapeno and corn, cook for about 3 minutes and added the potatoes (sweet and  purple).  Added salt and pepper with 1/2 teaspoon of Coriander and cover it for about 15 minutes at low-medium temp checking constantly and moving it around.  Added the Cilantro at the end and gave it another 3 minutes.

It was simple, colorful, taste and healthy.  The kids ate it all! which is always a great sign.

Lets see what is for tomorrow… another vegetarian dinner!
