Sunday Night = Chocolate Chunk Cookies

I have been working on making a batch of cookies the kids will love, but so will my husband (who is not a fan of sweets).  We finally came with a winner! The kids loved the cookies and dear husband went for SECONDS! The cookies were chewy, not so sweet because of the dark chocolate, but sweet enough to satisfy any chocolate chip cookie craving.

CHOCOLATE COOKIE

Chocolate Chunk Cookies

Yield: About 12-16 medium size cookies
Prep time:  2 hr.  25 min
Total time: 13 minutes

 

Ingredients
  • 2 and ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 and ½ teaspoon corn starch
  • ½ teaspoon salt
  • ¾ cup unsalted butter (melted)
  • ½ cup of light brown sugar
  • ½ cup of granulate sugar
  • 1 large egg + 1 egg yolk (room temperature)
  • 2 teaspoon of vanilla extract
  • ¾ cup of dark chocolate chunks
  • ½ cup of white chocolate chips

Directions

First in one bowl combine the dry ingredients: swift flour, baking soda, corn starch and salt and whisk together.

On a second medium bowl mix the melted butter, light brown sugar and granulate sugar and whisk until all is well combined (about 4 minutes).  Add the egg and the yolk and mix until well combined. Finally add the vanilla extract and mix again.

Open a hole in the dry ingredients bowl and add the wet ingredients until all is well combined. Finally add the chocolate chunks and white chocolate chips until well combined.

Cover the dough and place it in the refrigerator from 1 to 2 hrs.

Preheat the oven at 350 F.  Roll the dough into small balls (oval shape).  Line two baking sheets with parchment paper (or silicone mat) and place cookies (about 8 cookies per pan).

Bake for 13 minutes and let the cookies rest in the baking sheet for about 5 minutes. Cool in a cooling rack or clean dish.
